Prepare ingredients: cut pork belly into cubes, slice ginger, dried chili peppers, star anise

Heat oil in a pan, add pork belly and stir-fry

Stir-fry pork belly until oil comes out, add ginger slices, star anise and dried chili and stir-fry until fragrant

Add cooking wine, dark soy sauce, oil and light soy sauce and stir-fry until browned

Add water to cover the pork belly and bring to a boil over high heat, then reduce to low heat and blanch

Add salt and sugar and simmer for 5 minutes

Take out of the pot

Serve on a plate and sprinkle with chopped green onion
