Cut the tofu into cubes and set aside.

Blanch the cut tofu in salt water.

Fry the Sichuan peppercorns in oil and remove the Sichuan peppercorns.

Stir-fry the onion, ginger, and garlic into the pot, then add the minced pork and stir-fry.

Stir-fry until the minced pork is oily, add bean paste and stir-fry.

Fry out the red oil, add cooking wine, soy sauce, salt, a little sugar, and stir well.

Add hot water, add tofu and simmer over high heat.

Crush the removed peppercorns and set aside.

Stew the tofu until the soup is almost dry, pour a little water starch, add minced peppercorns and garlic sprouts, and drizzle a little sesame oil.
