Cut the pork belly into 1cm*1cm cubes. Pour water into the pot and bring to a boil. Add the pork belly. Pour in a spoonful of cooking wine and cook (ten minutes) before taking it out.

Take another pot, pour water, add peppercorns, aniseed, cinnamon, bay leaves, green onions, ginger, two spoons of dark soy sauce, two spoons of soy sauce, three spoons of rock sugar, half a spoon of salt and bring to a boil. Add the cooked pork belly and bring to the boil. After boiling, pour everything into the pressure cooker and press for 20 minutes.

Add chicken essence and reduce the juice over high heat.
