The Yunnan Mojiang purple rice I use here is of excellent quality.

First use a grinder to grind the purple rice into purple rice powder.

Pour the ground purple rice flour into the basin.

To add yeast, you can actually dissolve the yeast in warm water first and then pour it in to make it easier to ferment.

Add water or pure milk and stir. Adding pure milk will taste better.

After mixing evenly with chopsticks, knead the dough with your hands for about 10 minutes. When three lights appear: surface light, hand light, and basin light.

Cover with a wet towel and ferment until the dough has fermented to about twice its previous size. Because the fermentation time is different at different temperatures, it depends on the actual situation.

Take out the fermented dough and put it on the chopping board. I divided it into two doughs of similar weight. In order to prevent sticking to the chopping board, I sprinkled some loose powder on the chopping board. I used a rolling pin to roll out the dough into a rectangular shape and squeeze out as much air as possible.

Cut evenly into small pieces with a knife.

Take one piece of dough and place it in the palm of your left hand. Make an arch shape with your right hand and knead the dough into a round shape. Set aside.

Fill the steamer with cold water, cover it with a steamer cloth, and place the dough evenly in the steamer. Make sure there is a certain space between each dough to prevent it from becoming enlarged and sticking together after steaming.

Don't rush to steam, let the dough rest for about 20 minutes.

After it has risen, cover it with a lid and steam it over high heat. When steam is seen, turn to low heat and steam for about 15 minutes, then turn off the heat. Do not open the lid immediately, and simmer for about 2 minutes.
