  1. Have all materials ready.

  2. Remove the bones from the chicken thighs and cut into cubes, then marinate with cooking wine, black pepper, cooking oil and starch for 10 minutes.

  3. While the chicken is marinating, blanch the shredded bamboo shoots in boiling water and mince the leeks. Chop garlic and ginger.

  4. Spread the blanched lettuce shreds on a plate and set aside.

  5. Put oil in the pot, pour the chopped pepper and Pixian bean paste into the pot and stir-fry over low heat. Add sugar until fragrant. Pour in the minced ginger and continue to fry for 1 minute.

  6. Pour in the diced chicken and stir-fry over high heat until the diced chicken is cooked.

  7. Pour the fried chicken onto a plate covered with bamboo shoots, and sprinkle with chopped leeks.

  8. Pour the hot oil in the pot. (I used some Sichuan peppercorns, which makes it more fragrant) You can also leave it out.
