Tofu Vermicelli Soup
Overview
I remember that I like to make this kind of soup. Since I didn’t have tomatoes at home, I used tomato paste. Unexpectedly, it tasted great!

Chop green onions and prepare some shrimp skin.

Cut the tofu into cubes, slice the king oyster mushrooms, and shred the meat. Vermicelli and fungus should be soaked in advance.

Chop the coriander, don’t prepare it if you don’t like your classmates.

Heat the pan with cold oil and sauté the chopped green onions and dried shrimps until fragrant. The dried shrimps will be very fragrant when stir-fried in the pot.

Add shredded pork and stir-fry. Xi'er uses mutton, but any other red meat is fine.

Add tomato sauce and mushroom sauce and stir-fry until fragrant.

Add the fungus and king oyster mushroom and continue stir-frying.

Add appropriate amount of boiling water.

When the pot boils, add the tofu.

Cook for about 10 minutes, add salt and pepper and sprinkle with coriander.
