Scallion pancake
Overview
I have been trying to make delicious scallion pancakes. After repeated attempts, I finally made it. Well, as long as you work hard, it is not difficult to succeed.

Put warm water (72g), high-gluten flour (100g) and a pinch of salt into a mixing bowl and stir evenly with chopsticks

Knead into a ball

Let rest at room temperature for 30 minutes

Chop fresh green onions into pieces

To make pastry, combine oil (50g) and high-gluten flour (30g)

Mix well

Lard is ready

Weigh the risen dough and divide into small balls,

Take a small piece of dough and roll it into an oval shape with a rolling pin

Then apply the pastry made earlier

Add onions

Put lard on top of the onions (you can omit the lard if you don’t like it, but it won’t be fragrant)

Then sprinkle a little salt (so that the cake will have a flavor), roll it up from top to bottom,

Finally formed into a small group

Add some oil to the pan, not too much. After it is hot, put the dough into the pan and flatten the dough with a pressing spoon

Fry until both sides are golden brown

Place the fried pancakes into a baking pan, then bake in the oven until the surface becomes dry (both sides). In this way, the fragrant scallion pancakes are ready.
