【Lanzhou】Pork
Overview
Bad meat is also called fermented bean curd meat in some places. In Lanzhou, it’s called Lanzhou Zaorou, and the preparation methods are similar. Making this dish is very simple. In Lanzhou, almost every household makes this dish every Chinese New Year. You can steam several bowls at a time, let it cool, seal and freeze it in the refrigerator, and steam it thoroughly before eating. Paired with lotus leaf cakes and steamed buns, it is fat but not greasy when eaten. The more you chew, the more fragrant and delicious it becomes, which is appetizing and increases your appetite.

Wash the pork belly and put it into a pot with cold water. Add a spoonful of cooking wine, ginger slices, star anise, cinnamon and peppercorns to the pot. Cook until six to seven mature.

Remove and let cool.

Cut into approximately 5mm pieces.

Take 4 pieces of red fermented bean curd, pour a large spoonful of fermented bean curd juice, and crush them with a spoon.

Add a spoonful of cooking wine, sugar, and a little meat soup and stir evenly.

Dip each slice of cut pork belly evenly with fermented bean curd sauce.

Put the meat skin side down into the bowl one by one, and pour the remaining fermented bean curd juice into the bowl.

Put a few slices of ginger and scallions on top, steam in a pressure cooker for about 30 minutes.

Take it out after the steam is released. Pick up the green onions and ginger slices.
