Step 5: Pour in boiling water and simmer the beef brisket. First bring the soup to a boil over high heat, then adjust to low heat and simmer slowly. When pouring boiling water, add bay leaves, cinnamon and star anise.

Step 6: After simmering for about two hours, use high heat to reduce the juice. I like softer meat, so I simmered it for 2.5 hours today, and finally cooked it for nearly 15 minutes.
