Overview

I cooked a pot of luffa, mushroom and tofu soup. The tofu soup with luffa and mushrooms was light and refreshing, rich in nutrients and very delicious. The tender tofu melts in your mouth, the soup is full of the fragrance of luffa, and your taste buds can feel the deliciousness of crab mushrooms.

  1. Prepare the required ingredients: 260g loofah, 150g crab mushroom, 300g soft tofu, 10g spring onion.

  2. Chop the shallots into mince, scrape off the skin of the loofah and cut into hob cubes and set aside.

  3. Take the silken tofu out of the box and cut into small pieces and set aside.

  4. Remove the roots of the crab mushrooms and clean them; heat the pan over medium heat until the palm of your hand is hot, pour in 5ml of peanut oil, when the oil is hot, add the crab mushrooms and stir-fry until soft (medium heat for 2 minutes).

  5. Take a soup pot and add 1500ml of drinking water. Bring to a boil over high heat and add tofu cubes (high heat for 5 minutes).

  6. Add fried crab mushrooms until soft.

  7. Add the loofah pieces and cook until soft (medium heat for 2 minutes).

  8. Pour in 3ml of sesame oil.

  9. Add 3g of salt, sprinkle with chopped green onion, stir evenly and turn off the heat (medium heat for 1 minute).
