Prepare ingredients.

Cut the beef against the grain and into thin slices.

Add shredded ginger, starch and a little oil to the beef and marinate for a while.

Cut the celery stalks into small pieces of about 3cm.

Slice the green pepper diagonally and cut the dried pepper into small rings.

Boil water in a pot, add a little salt and a few drops of oil to the water.

After the water boils, add the celery stalks and blanch them for a few seconds.

Remove and quickly immerse in cold water.

Mix salt, chicken essence, oyster sauce, pepper, light soy sauce, and rice wine into a sauce and set aside.

Heat oil in a pan until 70% hot.

Add beef and stir-fry quickly until it changes colour.

Add the celery stalks, pour in the prepared sauce, and quickly stir-fry evenly.

Remove from the pot and serve on a plate.
