Wash the straw mushrooms.

Wash the mushrooms and carrots, remove the long stems in the middle of the mushrooms and cut into small pieces.

Peel the carrots and cut into small pieces.

Put water in a pot and bring to a boil over high heat. Add shiitake mushrooms and straw mushrooms, remove and drain.

Cut the green pepper into small pieces and cut the ginger into small slices.

Put into the oil pan, add ginger slices and scallion segments and saute until fragrant.

Add the drained mushrooms and stir-fry.

Add oyster sauce and stir-fry again.

Add a small amount of water starch and stir-fry.

Then add the carrots and green peppers and stir-fry quickly, add an appropriate amount of salt and white sugar (you can add chicken essence or not, the mushrooms are already fresh enough, not to mention the umami flavor of oyster sauce).
