Overview
Many people like to eat rice noodles. I often use this method to make cold rice noodles. It is very delicious and refreshing, and tastes a bit like Dandan noodles🥙.

Prepare ingredients.

First cook the dry rice noodles for five minutes until soft, then turn off the heat and soak for forty minutes.

Pour the soaked rice noodles into water and cook for another two to three minutes, then take them out and cool them in cold boiling water and set aside.

Shred the cucumber, cut the coriander into sections, cut the braised eggs in half, slice the grilled sausage diagonally, cut the green onions into small sections, and mince the garlic. Cut the pickled beans and red pepper into small pieces and set aside.

Prepare the sauce first: minced garlic, 1 tsp oyster sauce, 2 tsp light soy sauce, 1 tsp balsamic vinegar, half a tsp sugar, a little sesame oil, a little sesame oil, 1 tsp scallion oil and mix thoroughly.

Heat oil in the pot, add chopped green onion and red pepper and stir-fry until fragrant.

Add the chopped pickled beans and stir-fry, add 1 tsp garlic chili sauce, and a little water and stir-fry briefly.

Serve out the fried pickled beans.
