Wash the eggplant, cut it and set aside

Cut the peppers and set aside

Chop onion, ginger and garlic and set aside

When the oil is hot, add half of the onion, garlic, and all the ginger to the pot

Then add the eggplant strips and stir-fry

When the eggplant strips become soft, add pepper
