Luffa and Meatball Soup
Overview
Yesterday I went to the vegetable market to buy vegetables and saw this kind of loofah. It was the first time I saw such a long loofah after staying in Shanghai for 7 years. This type of loofah is only found in my hometown. I instantly felt like I was back home.

Scrape and wash the skin of the loofah and set aside.

Cut into irregular shapes and set aside.

Add salt, cornstarch, chopped green onion, diced ginger, light soy sauce, and an egg into the minced meat, and stir evenly with chopsticks.

Heat the pan, add oil, and quickly fry the loofah until soft.

Add boiling water. Cook over high heat for 5 minutes.

Shape the meatballs into small rounds and put them into the loofah soup for 3 minutes.

Just add 2 grams of salt. Mix well.

Remove from pot and pour into a large bowl until warm.
