Wash the edamame beans after removing their heads.

Put water in the pot, add a little salt and a few drops of salad oil. After the water boils, add the edamame and cook until it is raw.

Pour the cooked edamame into cold water, then rinse with cold boiled water and drain.

Put the edamame into the lock box, add a small amount of Sichuan peppercorns, one star anise, one or two bay leaves, and a little pickled pepper (optional). Pour in an appropriate amount of marinade, seal it and put it in the refrigerator for one night. If there is not much marinade, stir it several times to let it absorb evenly.
