My egg shredded wontons
Overview
I have loved eating wontons since I was a child, and I especially like the wontons from Pingyuan Restaurant. Forty years later, I will bring their wontons online. I don’t know if they are authentic anymore (because the older generation of chefs may have been gone, and I have also changed them according to my own imagination), or maybe Pingyuan Hotel no longer has this version of wontons.

Raw materials: Shuanghui public meat filling, wonton wrappers, eggs, coriander, ginger

Add sesame oil, salt, dark soy sauce, monosodium glutamate, oil, and minced ginger to the meat filling. Stir in one direction. Add some water while stirring. Add the water little by little until the meat filling becomes sticky, so that the wontons will be soft.

Let’s start wrapping. The first step: take a piece of dough, spread the meat filling on the dough, and wrap it with a chopstick.

Step 2: Use your middle finger to fold the upper end of the skin.

Step 3: Press the corner of the skin with your thumb, and roll it with the chopsticks in your right hand.

After rolling it up like this, scoop it out.

The chopsticks are still there, so hold the two ends with your hands and index fingers and push them towards the middle.

To spread the egg pancake, beat an egg into a bowl and beat it evenly with chopsticks. Apply a little oil to the pan and use low heat. Pour the egg into the pan, rotate the pan and spread it into a pancake. Fry both sides till brown.

Cut the egg pancake into thin strips, wash and cut the coriander into sections, put the seaweed and mustard shreds into a rice bowl, and add salt, MSG, dark soy sauce, and sesame oil

Add water to the pot. When the water boils, add the wrapped wontons and gently push them with a spoon to make the wontons float.

After the wontons are cooked, don't rush to scoop the wontons. First, scoop one or two spoons of soup into the bowl, mix the seasoning in the bowl with the soup, and then scoop out the wontons. The fragrant wontons are ready and ready to eat.
