Assorted fried rice

Assorted fried rice

Overview

The key to whether a piece of fried rice is good or not is whether the rice grains are distinct and shiny. If the rice is all lumped together and not stir-fried, then naturally the rice will not taste good. We usually use the leftover rice to make fried rice. After cooling, the rice tends to clump. The secret to easily separate the rice grains is to heat it in the microwave before frying. The heated rice will naturally loosen and no longer clump when fried, and the grains will be distinct.
