Overview
I bought two pork loin and asked the store owner to cut the loin for me, and cut it directly because the last time I took it home, I didn't cut it well. It's right to practice by yourself, but it's useless if you don't use the right method. The main reason for letting the store do it for you is to see how to perform the knife. Haha, I see I understand it, but I don’t know what will happen if I operate it myself. I’ll try again next time. This dish uses green chili and green Sichuan peppercorns and adds Sichuan peppercorn oil, which tastes great.

Sliced pork loin.

Wash the sliced pork loin several times with salt, then add vinegar, cooking wine, ginger slices and green onion segments to soak.

Boil a pot of water with a wide surface and quickly blanch the soaked pork loin.

After serving, rinse under running water or add ice cubes to cool.

Onions, green peppers, and green peppercorns are needed to prepare the peppery flavor. Dried green peppercorns need to be soaked in water.

Chop the soaked green peppercorns and green onions together.

Chop the green pepper into cubes and put it into a bowl with the onion and pepper paste.

Add 2 grams of salt, 1 gram of sugar, and 10 ml of rice wine.

Add 10ml light soy sauce

Add 5 ml of pepper oil. Add appropriate amount of sesame oil and a few drops of vinegar.

Mix the sauce evenly.

After cooling, put the kidney flowers into a bowl, pour in the prepared sauce, and mix evenly.
