Cut the meat into chunks.

Eight peppers, cinnamon, galangal, amomum villosum.

Onion segments, ginger slices, garlic cloves.

Boil the meat in water and skim off the foam in the pot.

Beat the scum away. Dish out and set aside.

Heat oil in a pan, add seasonings, ginger slices and garlic cloves. Stir-fry until fragrant.

Add the fried meat, stir-fry, add cooking wine and continue stir-frying.

Add the braised soy sauce and stir-fry until browned.

Pour in boiling water and simmer over low heat for one and a half hours, add an appropriate amount of salt, add scallions, and simmer for ten minutes. That’s it.
