Braised Pork Ribs with Bean Sticks

Soak the bean sticks and dried shiitake mushrooms in advance and wash them.

Prepare star anise, Sichuan peppercorns, chili peppers, and sliced ginger.

Add cooking wine to the water, add the ribs, boil for about 5 minutes and turn off the heat.

Rinse the blood foam from the ribs.

Cut the bean sticks into sections and the mushrooms into cubes.

After the oil is hot in the pan, add the pork ribs and stir-fry.

Fry until the surface is golden brown.

Leave oil in the pot, add rock sugar and stir-fry over low heat until it becomes syrupy.

Add chili pepper, ginger slices, Sichuan peppercorns and star anise and stir-fry until fragrant.

Add the bean sticks, mushrooms and ribs.

Add dark soy sauce and salt to taste.

Add water and simmer until cooked.

Serve out after the juice is reduced.
