Eat fresh mushrooms in oil
Overview
Stir-fried with white fungus and oyster mushrooms, it is a very nutritious dish. Although eating fresh mushrooms is called oil, it actually doesn’t taste very oily and is still very refreshing.

Prepare materials.

Cut and core the cucumber, cut it into small slices with a diagonal razor blade, add salt and set aside.

Soak the white fungus in cold water and tear it into small florets.

Clean and dry the oyster mushrooms and blanch them in water.

Blanch the oyster mushrooms, squeeze out the water and set aside.

Blanch the carrots.

Blanch the white fungus.

Chop green onions, mince ginger, and chop red pepper and set aside.

Heat the oil in a pan, add scallions, star anise, and peppercorns. When the scallions turn yellow, add an appropriate amount of sesame oil.

Add salt, sugar, cooking wine and vinegar to the ingredients in step 8, mix well, and pour in the boiled scallion oil.

Using the remaining heat of the original pot, add the fried oyster mushrooms, white fungus, and carrots and stir-fry quickly

Finally, pour in the oil from step 10 and stir-fry evenly before serving.
