It's called dry tofu in the Northeast, and in some places it's called Qianzhang, tofu skin.

Prepare two portions of green onions and dried chilies, as shown in the picture

Blanch the tofu in boiling water, then drain and control the water and set aside

Add shredded shallots, dried chili peppers (add more if you like spicy food, you can also add coarse chili powder), add steamed fish soy sauce and an appropriate amount of salt

Add oil to the pot, add scallions, dried chili peppers, Sichuan peppercorns, aniseed and bay leaves to the cold oil. Fry slowly over low heat until the scallions turn brown. Turn off the heat and remove the dry ones

Pour the hot oil in the pot into the dry tofu, and mix well (the oil is not used, you can leave it for cooking, which will be more fragrant)
