Wash the green vegetables you buy with water, dry them in a ventilated place, and blow them dry. Do not dry them in the sun, as the leaves will dry out and become brittle, and they will break when pickled. The basin and hands used for washing vegetables must not be oily, and must be washed with dish soap beforehand!

Let it dry for 2-3 days and it's almost done. This is a vegetable that has been dried. Don't make it too dry. If the leaves are wilted as shown in the picture, it's OK!

Put the dried vegetables into a large oil-free basin, pour the salt in portions, rub the vegetables like washing clothes, and knead the salt evenly so that every root and piece is evenly coated with salt! Pour the wine in portions and mix evenly! For the 12 kilograms of vegetables I bought, I used more than 5 taels but less than 6 taels of salt. I didn’t weigh the salt specially. Just taste it for salty taste after kneading it. It shouldn’t be too salty! It is better to use less wine than more, as it will have a bactericidal effect.

This jar is to be opened in three years, so seal the mouth of the jar with thin yellow mud, and then seal it with a plastic bag to prevent the yellow mud from drying out too much! If you wait until the second year to eat it, just seal the altar with water! Place the jar in a sunny place at home to dry!
