There was a multi-grain pancake shop next to my house. Later, it stopped selling pancakes and changed its store. But I missed the taste, so I had to make my own

Make the batter first, using flour➕corn flour (it’s better to add some soybean flour), add salt, and water to make a paste. Let it rest for about 40 minutes. Stir occasionally to prevent dough lumps

Then adjust the sesame leaf noodles, use flour➕black sesame seeds➕appropriate amount of salt, add less water, and knead into a dough. The dough should be hard. Cover with a damp cloth and let it rest for 20 minutes

Prepare the side dishes for the pancakes: Chop the chives into small pieces, cut the mustard into small pieces, and cut the carrots into small shreds and stir-fry until cooked (I specially prepared this for my daughter, if you are an adult, it’s up to you). Add some water to the sweet noodle sauce and loosen it slightly

After the sesame leaves have risen, roll them into thin cakes and cut them into small pieces

Put it into the oil pan and press until both sides are golden, take it out and set aside

Heat the base of the pan, brush a thin layer of oil, pour in the batter after the oil is hot, and spread

When one side is cooked, flip it over, crack in an egg, and spread it out until cooked

Brush with sweet noodle sauce, sprinkle with chopped green onion, pickled mustard, and you can also add some coriander

Finally, put a piece of hemp leaf, roll it up and eat
