Steamed Rice with Diced Eggplant and Egg
Overview
Want to eat rice. But there are always leftovers when cooking alone. I saw a lot of recipes for stuffed rice with mixed vegetables, and I was hesitant about what to eat at noon. [I suddenly wanted to make steamed rice with eggplant. It’s just a small bowl for one person, so I don’t have to worry about leftovers. It has both vegetables and staple food, so it really kills two birds with one stone.

Wash the rice clean, put it in a bowl and add an appropriate amount of water to soak for about two hours. Do not add too much water, just cover the rice.

Cut all the ingredients into cubes and add whatever you like. It tastes better if you add more meat, but I didn’t.

Stir-fry all the ingredients in a little oil, add salt and light soy sauce, spread them on top of the rice, put them in a steamer and steam for twenty minutes.

After steaming, open the lid and break in an egg. I stirred the egg yolk. I don’t like to eat the whole egg yolk. Then I closed the lid and let it simmer for five minutes.

Take out the pot and get ready to start.
