Bridge Tofu
Overview
I have eaten Guoqiao tofu steamed with fresh eggs, salted eggs, and preserved eggs once. It is quite interesting. Today I have modified it to use the steamed pork with egg that my children love and my favorite salted egg. It is delicious, beautiful and nutritious, and it is done!

Add oil, a little salt, a little cooking wine and starch to the minced meat and mix well. Soak the tofu in concentrated salt water to remove the beany smell and add a little saltiness naturally

Use your hands to evenly distribute the minced meat on the bottom of the plate

Take the tofu out of the salt water and cut it into thick slices, then place it in the middle to look like a bridge

Beat in the fresh eggs first

Break in the salted duck eggs on the other side, and use part of the salted duck egg white to pour over the tofu and fresh eggs. There is no need to add additional salt. Then steam over high heat for 15 minutes.
