Overview

I have made braised pork several times, and this time I added mushrooms. It felt like I had tasted it in the kitchen several times! Why are shiitake mushrooms so attractive?

  1. Cut the pork belly into pieces, put it in a pot with cold water, simmer and set aside.

  2. Cut the soaked mushrooms in half and set aside.

  3. Add oil to the pan, melt the sugar over medium-low heat and fry the pork belly until fragrant, then add the ginger and garlic slices and continue to sauté until fragrant.

  4. Add light soy sauce and dark soy sauce 2:1 to the pot and stir-fry the meat until it is evenly colored.

  5. Add hot water to cover the ingredients.

  6. Bring to a boil over high heat, add the mushrooms, turn to medium-low heat and continue to cook for about 45 minutes.

  7. Season with salt and turn to high heat to reduce the juice.
