Braised Pork with Mushrooms
Overview
I have made braised pork several times, and this time I added mushrooms. It felt like I had tasted it in the kitchen several times! Why are shiitake mushrooms so attractive?

Cut the pork belly into pieces, put it in a pot with cold water, simmer and set aside.

Cut the soaked mushrooms in half and set aside.

Add oil to the pan, melt the sugar over medium-low heat and fry the pork belly until fragrant, then add the ginger and garlic slices and continue to sauté until fragrant.

Add light soy sauce and dark soy sauce 2:1 to the pot and stir-fry the meat until it is evenly colored.

Add hot water to cover the ingredients.

Bring to a boil over high heat, add the mushrooms, turn to medium-low heat and continue to cook for about 45 minutes.

Season with salt and turn to high heat to reduce the juice.
