Strawberry Cheese Tart
Overview
Strawberries are really hard to find this season, but if you want to use them, you have to look for them. . . I searched several supermarkets and finally found it~~ Ingredients: Tart crust: 125g butter, 2.5g salt, 100g caster sugar, 1 egg (net weight about 50g), 1 egg yolk (about 20g), 250g low-gluten flour. Cheese filling: 100g cream cheese, 140g light cream, 60g powdered sugar, 50g strawberries. Surface decoration: 100g whipping cream, 10g powdered sugar, appropriate amount of strawberries

Crack 1 egg + 1 egg yolk into a small bowl, stir well and set aside

Soften butter at room temperature and add sugar

Use an electric whisk to beat

Add egg liquid in portions

Beat evenly

Sift in the flour and salt

Mix well, cover with plastic wrap and refrigerate for one hour

Weigh 25g of dough and roll it into a ball with your palms, flatten it and put it into the tart mold

Press gently until the tart mold is evenly covered

The edge is 2~3mm higher than the mold

Arrange the prepared tart shells on the baking sheet one by one

Use a fork to poke holes in the bottom

Place in the middle rack of the preheated oven at 180 degrees for about 25 minutes

After taking it out of the oven, let it cool and set aside

100g cheese + 40g light cream, put them together into a small basin

Heat over water and stir constantly until smooth

Let cool and set aside

100g whipping cream + 60g powdered sugar, beat with ice water at slow speed until 7 points

Pour the cooled cheese paste into the whipped cream

Continue to beat evenly

Wash the strawberries, dry the surface water, and cut into small pieces

Add to the beaten cream cheese

Mix well

Use a spoon to pour into the cooled tart shell

Place in the middle rack of the oven at 180 degrees for about 10 minutes

Let cool and eat directly

You can also decorate it with whipped cream and strawberries before eating
