Stir-fried beans with lotus root strips
Overview
I had half a section of lotus root left from making vegetarian pork ribs, and the soup was too little, so it was a pity to waste it. I just had a few string beans in the refrigerator, so I simply used them all and made this vegetarian dish ~ stir-fried lotus root strips with string beans. The taste is refreshing and good!

Ingredients: Beans, lotus root, carrots, garlic cloves.

Peel lotus root and cut into strips, peel and cut carrot into strips.

Break off the beans and soak for a while. Peel the garlic cloves and smash into pieces.

Heat the pan, pour oil, add minced garlic and sauté until fragrant.

Add the beans and stir-fry for a while.

Pour in the lotus root strips and continue to stir-fry.

Add carrot sticks and stir-fry continuously.

Add a little water and stir-fry for a while, cover the pot and simmer for about 1 minute to allow it to heat quickly and evenly.
