Shredded Eggplant with Minced Pork and Oyster Sauce
Overview
This is a recipe I made in the fall of 2015 before I posted it. When I was buying vegetables, the vegetable seller said that these were eggplants grown in his own yard, so I bought them. I tasted one while cooking and it was indeed different. It had the same taste as at home.

Tear the eggplant into strips and soak in water for ten minutes

Cut into sections and cut the ginger into thick strips

Heat oil in a pan, add minced meat and stir-fry until fragrant

Add onions and ginger and stir-fry until fragrant

Add the drained eggplant and fry until soft

Add oyster sauce and stir well

Add dark soy sauce
-
Add salt and stir-fry
-
Add appropriate amount of MSG and stir well

Add minced garlic, stir well and remove from the pan

It’s ready
