My mother knows that I like to eat salted fish from my hometown. She pickles some big fish every winter and can eat it when I go home during the Chinese New Year. This year, we used white fish from the Huaihe River to pickle and dry. This white fish is nearly 1 meter long and is really rare to see. It tastes delicious when cooked, and is full of mother's love. It's salty, spicy and refreshing, making you want to eat two more bowls of rice.

Have ingredients ready.

Chop the salted fish into pieces.

Add water and soak until soft, which will also remove some salt.

Wash and cut the ingredients, and soak the peanuts in water for half an hour to make them easier to cook.

Drain the water from the soaked fish pieces and fry in a pan until both sides are golden brown.

Push the fish aside, add onion, ginger and chili and grill over low heat until fragrant.
