Crack the eggs into a bowl and set aside (you can have as many eggs as you like)

Wash the celery and cut into sections.

Beat the eggs, fry with oil and set aside.

Put a little base oil in the pot, wait until the oil is hot and sauté the onion and ginger until fragrant. (Be sure not to put too much at this moment, because the eggs have already been fried in oil.)

After sautéing the onions and ginger until fragrant, add the celery segments and stir-fry. Stir-fry evenly, then add salt, soy sauce, and chicken essence and continue to stir-fry. When it is half cooked, add the prepared eggs and continue to stir-fry.
