Eggplant stuffed with potatoes
Overview
Most stuffed eggplants use meat. When I visited Meitian last time, I saw Meifeng Kitchen sharing the recipe of stuffed eggplants with mashed potatoes, so I learned to make it. The first time I made it, I didn’t get it right. The steaming time was a little longer, which affected the appearance of the dish, but the taste was still good. Thank you Meifeng for sharing

Peel and slice potatoes and steam them

While hot, press into mashed potatoes

Chop the meat into minced meat (actually I don’t use so much)

Put minced meat, mashed potatoes, minced ginger, and minced garlic together, add salt, cooking wine, light soy sauce, and oyster sauce and stir evenly to form potato meat filling

Cut the eggplant with a knife, then cut it into pieces at 5 intervals

Fill the middle of the eggplant with mashed potatoes

Bring water to a boil in a pot, place the stuffed eggplant on the steaming rack, and steam for about 8 minutes

Take appropriate amount of salt, cooking wine, light soy sauce, starch and water to make a bowl of juice

Sprinkle with chopped green onion

Decant the water from the steamer basin into the pot, pour the bowl of juice and boil until the soup is transparent

Pour the soup onto the eggplant
