Prepare the ingredients

Chop green onion, mince garlic and ginger, cut pickled pepper into small pieces, blanch tofu in boiling water and cut into small cubes with a knife and set aside

Heat oil in a pot, sauté minced garlic, ginger, chopped green onion and pickled pepper

Add minced meat and cooking wine and stir-fry little by little for about 2 to 3 minutes

Then add 2 teaspoons of light soy sauce, 1 teaspoon of dark soy sauce, 1 teaspoon of sugar, 1 teaspoon of vinegar, half a teaspoon of Pixian bean paste, stir-fry evenly and add a little water

Then add the tofu and stir-fry for a while to evenly color (the tofu is relatively tender and cannot be stirred hard. It is easy to break). Bring to a boil over medium heat, then reduce to low heat and add a little water starch to thicken the soup when it is almost dry

Finally, reduce the juice over high heat, add chicken essence, and a little salt (the bean paste is already a bit salty, so you don’t need to add it) and stir-fry evenly
