Overview
This red date and walnut cake from Jiuhe Western Pastry Shop has fascinated me for a long time. My children and I both love it. It tastes soft and a little bit spicy. There are a lot of chopped red dates and walnuts in it, which gives it a full texture! One time when I visited "Food World", I saw Tuo Tuo Ma's Mala Cake. I tried making it and found that it tasted very similar to Jiuhe's pastry. So, the homemade red date and walnut cake was finally born. This pastry is very suitable for children. The red dates and walnuts are quite nutritious, and it is steamed, so mothers don’t have to worry about their children getting angry after eating too much!

Prepare various materials, soak the red dates until soft, remove the core and cut into small cubes, roast the walnuts and knead them into small particles, knead the brown sugar lumps into pieces, mix the powder evenly and sift and set aside.

Crack the eggs into a clean, water-free basin and prepare to beat. (If the power of the electric egg beater is insufficient and it is difficult to beat the whole eggs, you can use warm water at about 50 degrees to beat them)

Beat at low speed until coarse peaks form and add all the sugar, then beat at high speed.

The egg batter that drips when you lift the whisk will not disappear immediately, and clear lines can be drawn on the egg batter.

Add the corn oil in three batches. Beat each time until the oil and egg batter are completely combined before adding the next time. If the batter is uneven, the finished product will not taste soft.

Add the previously sifted flour, baking powder and baking soda, stir evenly with a rubber knife, just like stir-frying, do not stir in circles.

Add red dates and walnuts and stir evenly using the same method.

Pour into the mold, wrap with plastic wrap and refrigerate for one night to ferment. (I use an 8-inch square mold. You can also brush a thin layer of butter inside the mold before pouring the batter, so that it can be easily removed from the mold after steaming)

After fermenting for one night, take it out, pour cold water into the pot, put the steaming rack in place, put the egg paste mold on the steaming rack and steam over low heat. After the water boils, turn to high heat and steam for 15 minutes, then simmer for another 5 minutes and open the lid.
