Slice the ginger, cut the garlic into sections, and separate the white and green garlic.

Wash the tripe and beef brisket and cut into wide strips, blanch in cold water in a pot.

Add the oil, white garlic and ginger to the water and bring to a boil. Add the beef brisket and tripe, add all the seasonings, simmer over low heat for 2 hours, add the green garlic and simmer for 5 minutes.
