The light cream here has already separated oil and water. The oil inside is butter and the water inside is buttermilk!

Weigh out 62ml, which is approximately 64 grams of buttermilk.

Normal way to make buttermilk

Prepare 62ml whole milk, 3.75ml lemon juice (3.75ml=1/2 teaspoon + 1/4 teaspoon)

Stir quickly and let it sit for 10 minutes. It will slowly appear some small bumps and you can use it

Now that you have buttermilk, you can make a cake. In a bowl, sift in low-gluten flour, cocoa powder, baking soda, salt, fine sugar, cocoa nibs, and stir evenly.

In another bowl, pour in the other wet ingredients: coffee, corn oil, eggs, and buttermilk, and mix well.

Then pour in the dry ingredients and stir evenly.
