Tuna Pocket Pizza
Overview
My son's school roommate once called it a mystery pie. This pocket pizza is inspired by Chinese pie and made for easy portability for my son who lives in school. I feel that tuna and mustard seed sauce go well together. The cheese is the kind of string that is hidden in the heart. It tastes rich and mysterious. Low-gluten flour and whole wheat flour are added to the pizza crust. There is meat, sauce and cheese. Isn’t it very nutritious for a growing student?

Mix high-gluten flour, low-gluten flour, olive oil, whole wheat flour, milk powder, yeast and salt, pour in water and knead into a smooth dough;

Knead into smooth dough;

Cover with plastic wrap and ferment in a warm place until doubled in size;

Take out the dough and deflate it, divide it into four parts evenly, cover it with plastic wrap and let it rest for 15 minutes;

After resting, take a small piece of dough and use a rolling pin to roll it into a rectangular piece of approximately 22 cm x 16 cm;

Spread tomato sauce in the middle;

Spread another layer of mustard seed paste;

Spread mozzarella cheese;

Sprinkle with chopped canned tuna;

Finally sprinkle with basil;

Fold one third of the way from left to right;

Then fold it one third of the way from right to left, and pinch to seal;

Cut into half evenly with a knife;

Turn it over and put it into the baking pan, pat it gently with your hands;

Cover with plastic wrap and ferment until 1.5 times in size, sift in flour and use a knife to make two small openings;

Place in the middle rack of the preheated oven at 230 degrees and 200 degrees for about 15 minutes;
