Cut the chicken legs into pieces and blanch them in cold water.

Soak dried bamboo shoots and cut into sections.

Add vegetable oil to the pot, add chicken legs and stir-fry until color changes.

Add onion, ginger slices, star anise, bay leaves and Sichuan peppercorns and stir-fry until fragrant.
