Braised pork ribs with red dates and lotus roots
Overview
I found a few pieces of ribs in the refrigerator. I had used the ribs for cooking earlier, and only the side bones were left. I used them to stew a pot with lotus roots and red dates. Unexpectedly, my husband only ate one piece of ribs and ate all the lotus roots.

Soak the ribs in cold water for about an hour, changing the water several times during the process.

Pour the ribs and cold water into the pot and bring to a boil. Cook until the meat turns white, remove and set aside.

Peel the lotus root and cut into large pieces.

Put the blanched pork ribs, lotus root and water into the pressure cooker.

Add salt, cooking wine, green onions, ginger, and red dates and select the meat button (keep pressure for about 15 minutes), simmer and serve.
