Prepare eggs and mustard.

Set aside some chopped green onion.

You don’t need too much pickled mustard, just a handful of chopsticks will suffice.

First break the eggs into a bowl, add salt and mix well.

Add another half bowl of water and continue mixing.

Skim any bubbles from the surface.

Boil water into the pot.

Place a plate on the surface, steam over high heat for ten minutes, then turn off the heat and simmer for another five minutes.

Time to open the lid.

Place mustard on the surface.

Sprinkle in the chopped green onions and simmer over low heat for one minute.

Turn off the heat and pour soy sauce and sesame oil on the surface.

Finished product. It is fresh and tender in the mouth and smooth with rice.
