First chop the whole chicken you bought into pieces, then put it into a pot with cold water and boil it. After boiling, there will be some floating blood foam on the water surface. Use a spoon to skim it out. After about 2.3 minutes, take out the chicken pieces.

Pour out the water in the pot and brush it clean. Heat the pot, pour in peanut oil, and add sugar or rock sugar.

Stir continuously with a spatula until the sugar melts to avoid sticking in the pot for a long time.

Add the chicken pieces, green onion, ginger and garlic into the pot and stir-fry. Add in the dark soy sauce and continue to stir-fry until it has a nice color.

Pour boiling water into the pot until the chicken is soaked.

Add the dried mushrooms that have been cooked in advance into the pot.

After about 20-30 minutes, the soup will be almost gone. Add salt (according to your own taste) and you can start the pot.
