Chicken Sauce Rice Noodles
Overview
Rice noodles are a kind of food made from rice and one of the indispensable staple foods for Yunnan people. Although everyone loves to eat rice noodles, everyone’s preference is different, so the rice noodle soup is also different, such as chicken, pork, beef, bean soup, etc. This morning’s breakfast is rice noodles with chicken juice. The chicken is an old hen from the farm and is a little fat, but the chicken soup cooked this way is the most fragrant. The chicken soup is cooked the night before and stored in the refrigerator, making breakfast quick and easy in the morning.

Take the chicken out of the refrigerator, defrost and chop into small pieces. Cut the fat off the chicken and set aside.

Smash the grass fruit with the back of a knife, wash and chop the ginger and set aside.

Put the chicken fat into a wok to refine it. After the chicken fat is refined, add the grass fruit and ginger and stir-fry until fragrant.
