Chop onion, ginger and garlic, add cooking wine, dark soy sauce, chicken essence, salt, sugar, vinegar, starch and water to make a gravy

Cut potatoes and eggplants into cubes, and cut green peppers into cubes

Heat the oil in the pot until it is 70% hot, add the potatoes and fry until golden brown and take them out
