Chicken feet are very popular as a snack no matter how you make them. This time I made spicy roasted chicken feet, which is spicy and goes well with wine.

Cut off the toenails of the chicken feet, chop them into two sections from the middle with a knife, and then clean them.

Pour the cold water into the pot and blanch the chicken feet with a little cooking wine. After the water boils, simmer for about 1 minute and remove.

Heat a wok, add vegetable oil, add rock sugar and cook over low heat until the rock sugar turns red and bubbles.

Add the chicken feet and stir-fry until browned, then add light soy sauce, dark soy sauce, minced ginger, minced garlic, and dried red pepper and continue to stir-fry for a while.

Add an appropriate amount of boiling water, a little cooking wine, and 1 star anise, bring to a boil over high heat, then cook over medium heat for about 15 minutes.

Then add salt, chopped millet pepper, and white pepper over high heat to reduce the juice.

When the soup is thickened and the chicken feet turn bright red, turn off the heat.

After serving, sprinkle some coriander or green onions.
