Cut the duck legs into pieces and soak them in cold water

Heat oil in a pot (I use an enamel cast iron pot). Add onion slices and garlic cloves and sauté until fragrant. You can add a dried chili pepper

Add duck cubes and stir-fry

The fried duck pieces change color and the skin becomes oily

Add light soy sauce, dark soy sauce, and oyster sauce and stir-fry until browned

Add beer, one fifth of the bottle is left, bring to a boil over high heat to evaporate the smell, then cover the pot and simmer over low heat

Cook until the duck legs can be pierced with chopsticks, add salt, add potato pieces and cover to continue cooking

When the potatoes are cooked, reduce the juice over high heat and serve on a plate
