Crystal skin jelly
Overview
I remember when I was a kid, I could only eat pork skin jelly during the Chinese New Year. At that time, pork was supplied with the skin on, and the skin would be cut off to make skin jelly separately. Nowadays, pork with the skin is rarely sold, and the skin alone is more expensive than pork. You can rarely see pork skin in supermarkets, so buy some when you see it.

Steps
-
The skin of the meat bought in the supermarket has been cleaned and rinsed with water;
-
Pour water into the pot. When the water is warm, add the pork skin and cook. Use chopsticks to stir the skin;
-
Cook until the skin of the meat changes color and curls up, then take it out;
-
Rinse the cooked meat skin under cold water to cool it down. Although it has been processed, you can still see the hair on the meat skin. Use tweezers to pull it down one by one, and use a knife to scrape both sides of the meat skin to remove the oil. This step is quite annoying, and your hands are covered with oil. It is difficult to take pictures;
-
Cut the cleaned pork skin into strips of about 2 cm;
-
Pour water into the pressure cooker, add green onions and ginger slices,
-
Add the pork skin strips and cook until the pot is boiling. Do not cover the pot during this process. If there is any foam during cooking, it needs to be skimmed off.
-
Add an appropriate amount of salt, cover, and put on high pressure for 15 minutes;
-
After deflating, put the meat skin and soup into a crisper, let cool and then put it in the refrigerator;
-
I tasted a piece of the freshly cooked one first, it tasted delicious with some soy sauce;
-
The frozen pork skin after cooling has transparent spots and has not been placed in the refrigerator;
-
The refrigerated pork skin jelly is purple in color
-
When it is turned upside down, it will turn purple. Use a knife to cut it against the edge of the container;
-
After cutting it, it will turn purple;
-
The pork skin jelly itself has no flavor, so pound some minced garlic, mix well with light soy sauce and rice vinegar, and eat it as a dip.
