No-bake----Frozen Lemon Cheese Birthday Cake
Overview
This cake was given to my sister-in-law for her birthday. It has a sweet shortbread base, a sweet and sour cheese layer in the middle, and an orange-flavored mirror decoration. It is very pleasing to the eye. There are also very fresh fruits and strawberries. Even if you cut the cake half an hour after eating, you will not feel tired. What is particularly worth mentioning is the mirror decoration made of QQ candy, which is very popular with children. It is the last word that it is easy to operate and can be delivered easily.

Steps
-
Prepare the above-mentioned materials. Before making the cake, prepare all the materials and utensils to be used. For example, cut the cheese into small pieces and soften it at room temperature, squeeze the lemon juice, soak the gelatine in cold water until soft, and melt the butter in hot water. Put the digestive biscuits in a plastic bag and roll them into pieces with a rolling pin (if the biscuits are not crispy, place them in the microwave for a minute), pour them into a bowl of melted butter and mix well with the butter.
-
Pour the mixed biscuits into an 8-inch loose-bottom cake mold, wrap in plastic wrap and refrigerate until ready.
-
When the cheese is well softened (you can easily make pits on the cheese block with your fingers), take a basin, pour hot water of about 80 degrees, put the cheese basin into the hot water basin, use a manual egg beater to beat the cheese until it is smooth and grain-free.
-
Add the sugar to the cheese paste and stir evenly, then add the egg yolks and stir evenly. (The cheese basin has been sitting in the hot water basin without taking it out)
-
Squeeze out the soaked gelatine and melt in hot water. Add lemon juice and mix well. (This step can also be done in advance, just keep the gelatine bowl in a hot water basin to keep it melted)
-
Pour the mixed lemon juice into the cheese paste and mix well.
-
Prepare whipped cream: The whipped cream should be refrigerated for at least 12 hours before whipping. This step can be omitted if it has been kept in the refrigerator. Take a slightly larger basin, pour cold water into it, put a few frozen ice packs, then put the basin where you are going to whip the whipping cream in the ice pack water, and chill it first; pour in the whipping cream, beat it with an electric egg beater at low speed first, then turn to high speed when the volume starts to increase and thicken.
-
It's ready when there are sharp corners on the whisk when you lift it up and the cream can still flow.
-
Add the whipped cream to the cheese paste in 3 batches, cut gently in a stir-fry manner, stir once and then add the next batch.
-
Take the mold out of the refrigerator, pour in cheese cream, smooth the surface with a spatula, re-wrap it with plastic wrap and put it in the refrigerator, refrigerate for 4 hours before decorating later.
-
Prepare 100 grams of orange-flavored QQ sugar and 120 grams of orange juice. Put the QQ sugar in a bowl, pour in the orange juice, and microwave for 1 and a half minutes until the QQ sugar melts. Stir evenly with chopsticks. Let it cool completely and then gently pour it on the frozen cheese. Refrigerate for 2 hours to allow the QQ juice to solidify. Soak strawberries in salt water and set aside.
-
The frozen QQ juice layer is good for placing fruits, just be gentle when placing them. Put it in the shape you like, and a beautiful birthday cake is completed!
-
Pair it with a cake box and it will instantly make you look classy!
