Crab Roe Tofu
Overview
The lactone tofu melts in your mouth. When you take a sip, you can feel the gritty texture of the egg yolk wrapped on the tofu, paired with the light fresh seafood flavor of crab sticks. This time, I fell in love with it.

Turn the fat tofu upside down on a cutting board, cut off the four corners at the bottom, tap the bottom gently with a knife to allow air to enter. If there is a gap between the tofu and the box, remove the box and cut into small pieces.

Peel the duck eggs, leaving only the oily yolk, and crush it with a spoon.

Slice crab sticks into thin slices and chop green onions.

Pour salted egg yolk into the oil pan, stir-fry until foamy, then add crab sticks and stir-fry together.

Add about 200ml of water and bring to a boil over medium heat. (The amount of water should not exceed two-thirds of the height of the tofu, and it is best to cover one-third of the tofu.) After boiling, add the tofu, boil again, then reduce to low heat and simmer for about 3 minutes, and add an appropriate amount of salt to taste.

Pour in the water starch, remove from the pot when the soup thickens, and garnish with chopped green onion.
